Day 7: Sun Blessed Tomato Horses

These photos don’t necessarily scream winter in Iceland, right?  But that is what you get when you combine the restaurant with next level greenhouse genius!  Friðheimar has the most epic tomato soup we have ever had.  Literally strait from the vine that morning, they make delicious soup and couple it with fantastic cheesy bread.  I probably had 5 bowls and at least one loaf of bread myself!

Before we ate, they took us on a little tour of the green house.  They explained how the whole greenhouse is headed by the nearby geothermal vents (they pipe water all through the building to keep the plants at the right temperature).  The showed us a box of bees that they use to pollinate the different sections.  It was pretty incredible to see how dialed the system is.

Then we sat down for the most amazing meal we had in Iceland (Iceland, in general, is pretty expensive to eat out – so this was our one and only choice! And we are so glad we stopped here.)  I think Madison’s favorite part was the live basil plant and the tiny scissors so you could cut your own for your soup.

I think Theo may have eaten the most bread out of all of us though – he was pounding the stuff.

We hung out in the warm greenhouse probably longer than we realized.  It felt so nice to be in a warm place!

As we were driving down the road, we passed a group of horses that were so majestic, we had to turn around and go see them.  They looked like they were being blessed by the Icelandic sun god – the sun was gleaming through their manes just right. These guys were so friendly!  They just came right up to us and let us pet them.

All in all, Iceland was an epic adventure.  We loved the way we did it – mellow and at our own pace.  We loved having the flexibility of van travel.  And we really can’t wait to come back, and enjoy it in the summer (we have literally already started making plans!)

    Have you guys heard the newly joined 60th national park?

      Wow! Thanks for reading! And yeah! We did hear about it! Not exactly sure what to think about it though. But, it is on the list now haha
